Egg Rolls are only for Chinese dinners, right?
WRONG!!
In our house we have one person who eat, sleeps, lives and breathes cheeseburgers. Don't get me wrong, I love a good burger as much as the next person but a regular burger gets old after a while.
I decided to try something different and make a cheeseburger into an egg roll! AND OMG!! Even my picky burger lover, L O V E D them!!
These made an easy supper, but could be perfect for finger foods, after school snacks, or just because they're really freakin' good!! Pair them with the homemade mac sauce and you'll knock it out of the park!!
Ingredients:
10 egg roll wrappers
1/3 medium onion, diced
3/4 - 1 lb hamburger
5 slices cheese, cut up
1 egg whites
Mac Sauce (see below)
Directions:
Heat oil in a skillet and sautee onions until softened. Once softened, add in hamburger and cook until browned--season with salt, pepper and garlic powder to taste. Drain fat and add meat mixture to a bowl.
Cut up five slices of cheese and add to your bowl with the meat mixture. Stir to combine very well.
Grab one egg and crack open the white into a bowl--discard the yolk. Beat.
Now you want to grab your egg roll wrapper and place it down in a diamond shape. Add 2 heaping tablespoons full of your meat mixture and place in the middle of your wrapper. Start with the side closest to you and cover your meat and then bring in the 2 sides (it'll almost look like an envelope) and roll. Brush your remaining "point" with a little of the egg wash to seal it shut.
Repeat until all 10 are done.
Fry in batches--don't over crowd your pot/pan/fryer. Make sure you fry on one side until golden brown and flip 1 time and fry on the other side.
Remove from grease and place on a towel lined plate or pan to collect the grease.
Let cool--make up some mac sauce to dip in and VIOLA!! EZ-PZ and so dang good!!
~MAC SAUCE~
1/4 cup mayo
1 tbsp tomato paste
garlic powder, to taste
1 tsp paprika
Combine all in a bowl and mix very well!
