Copycat KFC Potato Bowl

I love the KFC mashed potato bowls! I mean what could be better than combining all the things I love--mashed potaotes, chicken, gravy, corn and cheese?! Umm...nothing!!


Where we live isn't super far from town, but where we live in reference to where our closet KFC is, isn't the most convenient for us. So, I decided to make my own version of the bowls!


And let me tell y'all, my kids cleared these bowls in record time!! And they really did taste just like KFC! Does that mean the colonel and I cook alike? Hmmm.... Just kidding! :)


INGREDIENTS:

(For the chicken)

  • 1 cup of buttermilk

  • 1 tbsp hot sauce (I use texas pete)

  • 3/4 cup flour

  • 1/4 cup corn starch

  • 1 tbsp cajun seasoning

  • 1 tbsp baking powder

  • 1/2 tsp salt

For the rest of the bowl

  • mashed potatoes (homemade or store bought--your preference)

  • canned corn

  • brown gravy (homemade, add water packs, or jarred)

  • colby jack shredded cheese

  • biscuits (homemade--see THIS recipe, or store bought)


DIRECTIONS:

  • Trim chicken of any excess fat. Wash and drain well. Cut into 1-inch pieces.

  • In a large bowl, combine buttermilk and hot sauce. Stir until blended. Add chicken, cover and marinate in the refrigerator for at least 4 hours or overnight. Drain chicken.

  • In a bowl, combine flour, corn starch, baking powder, Cajun seasoning, and salt. Whisk until well-dispersed.

  • Add chicken pieces and with hands, toss until fully coated.

  • Place single layer of chicken in the air fryer, spray with oil and cook at 360 for 14 minutes (flip half way through).

  • While the chicken is cooking, make your potatoes, corn, gravy and biscuits.

  • Once the chicken is done, assemble your bowls in THIS order: potatoes, chicken, gravy, corn & cheese.

  • Serve with warm biscuits!!
