I'm pretty sure we've ALL been to Outback Steakhouse at some point.
When our family goes, my favorite item on the menu is the Alice Springs Chicken. Which is actually kind of funny because typically, I don't really care for honey mustard. But there's something about this dish that makes me forget about that!
Chicken, bacon, mushrooms, honey mustard and cheese---a combo I never thought I'd like, but absolutely love!!
With this recipe, you can make your own honey mustard or use store bought--either way is fine, I don't judge! I'll share the homemade recipe below as well!
Alice Springs Chicken
Ingredients:
4 chicken breasts
Honey mustard (see recipe below)
Bacon
Mushrooms
2 tbsp butter
Shredded Cheddar jack cheese
Directions:
If using homemade honey mustard, make it up and pour into a gallon size ziplock bag (save a little for dipping later). Place chicken breasts in the bag with the honey mustard, seal up and place in a bowl in the refrigerator to marinate at least 2 hours, if not all day or over night.
After your chicken is done marinating, heat oil in a skillet and place chicken inside. Sear on each side for 3-4 minutes. Remove and place in a baking dish. Meanwhile, fry up bacon strips and sautee mushrooms. I don't measure because I do it to our liking, which may be more or less than you like!
Once your bacon is done, place on a plate with paper towels to drain the grease. Once drained, top your chicken with the bacon and then top with mushrooms.
Now my favorite part--G E N E R O U S L Y cover all your chicken with as much cheddar jack cheese as you like!! Don't be afraid to get cheesy!! :)
Cover your baking dish in tin foil and bake at 375 for 8-12 minutes.
When it's done, plate it up with some fries (like outback does) and a little of the homemade honey mustard for dipping!
~HOMEMADE HONEY MUSTARD~
6 tbsp honey
2 tbsp mustard
2 tbsp soy sauce
4 tbsp cider vinegar
4 tbsp sugar
1 cup mayo (we prefer dukes--I mean we are in the south :P )
Combine all ingredients and mix well!
