One Pan Chicken and Rice


If you’re a working mom like me, you know the joy in an easy, quick, one pan meal!!

From start to finish, the whole meal was done in UNDER 30 minutes!!

Chicken and rice is a pretty frugal meal as well, so there’s that added bonus as well! You may save some money, but definitely don't skimp on the flavor!

INGREDIENTS:

  • chicken tenders or chicken breast

  • 2 packs of chicken flavored rice

  • 4 cups of chicken broth

  • 2 tbsp butter

  • salt, pepper and garlic powder to taste


DIRECTIONS:

Melt 2tbsp butter in a skillet. Season chicken with salt, pepper and garlic powder; add to melted butter—seasoned side down. Season other side while chicken is browning. Flip and cook on the other side. Keep in mind, your chicken doesn’t have to be completely cooked through before you add your rice.

Add your dry chicken flavored rice packs to the pan with chicken. The packages call for water but I choose to use chicken broth instead because it gives it more flavor.


Stir, cover and cook until your rice is done and the chicken is cooked through.

Once it’s a done, serve chicken, sliced, over a bed of your rice. Add veggies if you want and maybe some bread if you like. Or if you’re like us, the chicken and rice filling enough on it’s own!
