When I tell you I love all things strawberry, I'm not lying.
When strawberries come into season, I'm constantly looking for a reason to have them easily accessible in my fridge!
On my last grocery trip, I grabbed another another tub of strawberries because--well, why not?! :)
I decided with this batch of strawberries , I wanted to make homemade syrup. I love when we go to IHOP and get breakfast because I always gravitate towards the strawberry syrup!
So here's the easiest make it yourself homemade strawberry syrup:
3 cups of diced strawberries
1 cups of granulated sugar
2 tbsp lemon juice
1/4 tsp vanilla extract
In a sauce pan, combine all ingredients and stir. Over medium-high heat, bring to a boil (stirring frequently). Once you have a good boil going, turn the heat down to medium and continue cooking for 15 minutes. After this time, your volume will have decreased by 1/3 up to 1/2 and the mixture will have thickened noticably. Remove from heat and let cook. You can use immediately, or pour into mason jars and save for breakfast.
We chose to put ours in the jars and the fridge after I made the syrup to use for our next batch of waffles for breakfast!
