Strawberry Peach Crumble

Summer is here and that means the season of cook outs is here!


Honestly, that (and the beach) are my favorite parts of summer! And the fruit in the summer is just OMGosh good!! I'm a strawberry fan through and through, so anytime I can have strawberries, count me in!


This recipe is a perfect dessert for a cookout or family gathering OR if you just have some peaches & strawberries that need to be used up before going bad!! If you're like me, I hate throwing out food--that's my money going in the trash!


I made this last night and I'm honestly not sure how long it'll last--I had to grab a bite before bed! :)




Ingredients:

(Filling)

  • 2 1/4 tsp flour

  • 1 tbsp lemon juice

  • 1/2 (1lb) container of strawberries; halved

  • 3 peaches; sliced

  • 1/4 cup brown sugar

Crumble Topping

  • 1/3 cup all purpose flour

  • 1/3 cup old fashioned oats

  • 1/8 cup brown sugar

  • 1/2 tsp cinnamon

  • scant dash of salt

  • 1 stick of butter, cubed

Directions:

For the filling, in your baking dish, combine flour & lemon juice. Add sliced peaches and halved strawberries; sprinkle brown sugar on top. Gently stir to combine.


For the crumble, in a separate bowl (or food processor) add in flour, oats, brown sugar, cinnamon and salt. Mix well (or pulse if using processor). Add in butter. Pulse if using a food processor or use a fork to work the butter into pea size.


Sprinkle the crumble mixture over your filling in the prepared dish and bake for 40 minutes at 350 degrees. Once done, let it cool and serve! It's great topped with vanilla ice cream!!
